Disable iTunes Backups for iOS Devices
Firstly, come out of iTunes and launch the Terminal. Now enter the following defaults write command:
Relaunch iTunes. This will result in syncing of connecting iOS devices but without a backup copying over

Relaunch iTunes. Now connect an iOS device to make sure whether the backups are working again
